Nitrates are often present in plant tissue in small amounts. When a crop, such as corn, is fertilized with nitrogen fertilizer in pursuit of high yield, it results in a high level of nitrates in the soil. These nitrates are usually taken into the plant and converted to proteins, amino acids, and other compounds as part of the plant’s normal growth process.
